Delhi Beans and Apples

2 tsps vegetable oil
1/2 cup chopped onions
2 small golden delicious apples, peeled, chopped
1 (1-lb) can kidney beans, rinsed and drained

1 (1-lb) can stewed tomatoes
2 tbsps honey
1 tbsp cornstarch
1 tbsp water

  1. Preheat the oven to 350-degrees. Lightly oil a 1-1/2 quart baking dish or spray with a nonstick cooking spray.

  2. Heat oil in a large nonstick skillet over medium heat. Add onions and cook 5 minutes, stirring frequently. Add onions and cook 5 minutes stirring frequently.

  3. Remove skillet from heat and add remaining ingredients, dissolving the cornstarch in the 1 tbsp of water before adding. Mix well.

  4. Spoon into prepared baking dish. Cover and bake 40 minutes.
