Gazpacho
Adapted from a recipe in: The Good Housekeeping Illustrated Cookbook

Type: Vegan

3 cups tomato (or V8) juice
3 tbsp olive oil
3 large tomatoes, peeled and seeded
1 cucumber, peeled and seeded
1 small onion

1 small green pepper, cut up
1 small garlic clove
1 tsp sugar
1/2 tsp hot pepper sauce
such as Tabasco™ or green Tabasco™

In covered blender container (or food processor) at high speed, blend all ingredients -- one-third at a time, until finely chopped. Pour into a large bowl; cover and chill completely (about 2 hours and for up to one week).

Per serving: 173 Calories
*Reduce fat anc calories by reducing the oil, but I wouldn't advise eliminating it completely; use a flavorful, fruity olive oil to make every gram of fat worth it.
