Great Northern Mock Tuna Salad

Total Time: Approx. 10 minutes, plus chilling time

1 (15-oz) can Great Northern beans, rinsed and drained
2 tbsps finely chopped onion
2 tbsps sweet pickle relish*
1/3 cup finely chopped celery
1 tbsp plus 1 tsp reduced-calorie (low or no-fat) mayonnaise**
dash garlic powder
salt and pepper to taste

  1. Place beans in a medium bowl and mash with a fork.

  2. Add remaining ingredients and mix well.

  3. Chill several hours to blend flavors.

NOTE: I add a dash of kelp seeds (available in spice sections) and/or bay seasonings to lend a hint of the sea to this salad. Makes great sandwiches and good on saltine crackers. Other notes: *Finely chop sweet (or dill) pickles if you don't have relish on hand. **Nayonnaise or Vegannaise (or other vegan substitute) will make this dish vegan.
