Low-Fat Oatmeal Raisin Cookies

1 c old-fashioned rolled oats
2-1/2 cups unbleached all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt (optional)
1 cup brown sugar, firmly packed
3/4 cup plus 2 tbsps applesauce
1 egg white, lightly beaten*
1 tbsp vanilla
1 cup raisins

  1. Preheat oven to 350 degress.
  2. Use a nonstick baking sheet or line abaking sheet with baking sheet liner/lightly spray with vegetable cooking spray.

  3. Combine oats, flour, baking soda, cinnamon, and salt (if using) in a separate bowl, beat together brown sugar, applesauce, egg replacer, and vanilla until well combined.

  4. Stir wet ingredients into dry ingredients and fold in raisins.

  5. Drop cookie dough on sheet by the tbspful. Leave 1-1/2 inches between cookies.

  6. Bake for 15 minutes. Let cookies cool slightly on a wire rack.
