Katie’s Tofu Pasta Sauce

2 tbsps olive oil
1 lb firm tofu, cut into ¼-inch cubes
1 medium onion, diced
1 tbsp soy sauce (or tamari)
1 cup frozen peas, thawed
fresh (or dried) parsley

  • Heat the olive oil in a medium frying pan over medium heat.

  • Sauté the tofu and onion until the onion becomes soft, about 5 minutes.

  • Add the soy sauce and peas and continue to cook over low heat until heated through.

  • Serve over your favorite pasta and garnish with parsley.
